Vietnamese Tomato Rice (Com Sot Ca Chua) Ingredients

4 cups cooked white rice	1 tablespoons sugar
2 tbsp peanut oil	2 tablespoons tomato paste
5 medium shallots or 1 brown onion (chopped finely)	1 1/2 teaspoon light soy sauce
2 cloves garlic (crushed)	1/2 teaspoon of salt pepper & to taste
3 tomatoes (seeded and chopped finely)	1 bunch coriander leaves for garnish

Instructions for Vietnamese Tomato Rice (Com Sot Ca Chua)

Cook rice on the dry side, or cook and refrigerate overnight. Bring to room temperature before cooking.
Heat oil over medium heat and fry shallots or onion and garlic till soft
Add in tomatoes, sugar, soy sauce and tomato paste and cook till mixture thickens
Add cooked rice and gently fry, mixing thoroughly
Add in spring onions, salt & pepper and mix well again
Serve onto a plate and garnish with the coriander leaves
