Buttery-Scotch Shortbread

A buttery flakey treat.

Ingredients


Preparation

preheat oven to 300*. Have ready an ungreased 9" square pan.

In large bowl, cream the butter until pale and fluffy. Add both sugars and beat untill well combined. Beat in vanilla.

In a small bowl, sift the flour and salt together. Gradually add the flour mixture to the butter mixture and mix on low speed just untill blended.

Using floured fingertips, press the dough evenly into the pan. You may sprinkle any kind of granulated sugar over the dough (1 tablespoon).

Bake about 1 hour. Remove from oven and immediatly cut into 3"x1" strips. Allow to cool for 30 minutes before removing from the pan.

So simple and very yummy! I used an 8x8 pan and it worked fine. An hour was just about perfect, but a couple more minutes might have made it too well-done, so you might want to peek at it a little sooner.

Shortbread is one of the simplest cookies you can make, and requires few ingredients. This recipe produced cookies that were crisp and tender, buttery and rich, and just barely sweet. Perfect for those who like to have a very simple yet tasty cookie or biscuit with their coffee or tea.
