Recipe to create the spoon bread mix that used to be sold by Wilkins-Rogers Mills in Maryland
Blend dry ingredients together in mixing bowl with wire whip.
Add eggs, oil and water to dry ingredients and mix with wire whip just until uniform. Add the milk and mix with wire whip again just until the batter is uniform. Pour into a greased 1? to 2 quart casserole dish. Bake at 450F for 35-45 minutes.
Note: For a drier spoon bread you can use as little as 1/2 cup of water instead of 1 cup. The "bread" should have layers, though, with an almost custardy layer in the middle.
Note: Indian Head Yellow Corn Meal can be used instead of white.
