Grandma Jo's Cowboy Cookies Ingredients

2 cups flour 2 eggs
1 teaspoon baking soda 1 cup shortening
1/2 teaspoon salt 1 teaspoon vanilla
1/2 teaspoon baking powder 1 1/2 cup chocolate chips e.g., "semisweet morsels"
1 cup sugar 2 cups oatmeal
1 cup light brown sugar 1/2 cup chopped nuts optional

Instructions for Grandma Jo's Cowboy Cookies

Preheat oven to 375. In small bowl, mix flour, baking soda, salt and baking powder. In large bowl, cream together sugar, brown sugar, eggs, shortening and vanilla; stir in flour mixture. Fold in oatmeal, chocolate chips and nuts last. Drop by rounded teaspoonfuls onto greased cookie sheet, about 2 inches apart (we're able to fit about 12 on a regular cookie sheet, in a 3-by-4 arrangement); bake for 9-10 minutes.
