A nice smoky flavored black cod, very moist and great for dinner or as appetizers
Get the weber fired up. Once the coals are white, split the coals with 1/2 on each side of weber. Put the soaked alder on the coals and set the top vent just less than 1/2 open(bottom vents should be open all the way).
Put the fish on an aluminum pan, or aluminum foil. Place the sliced lemon on the cod, covering the entire top side.
Once the fire has cooled down a bit (you should be able to put your hand over the vent for a few seconds), place the pan in the middle of the grill.
Place the lid firmly on the top.
If the fire is slow enough, this should take up to an hour to smoke. It is worth the wait. Check every 20 minutes, depending on the size of the fish.
