Preparation

Pierce roast at 1 inch intervals with a meat fork, and place in a large heavy duty zip lock plastic bag.

Combine vegetable oil and next 5 ingredients; pour over roast. Seal and chill 24 to 48 hours, turning roast occasionally. Remove roast from marinade, discarding marinade. Place roast on a lightly greased rack in a broiler pan; sprinkle with pepper.

Bake at 325 for 1 hour 50 minutes or until a meat thermometer registers 145 for medium rare or 160 for medium. Let stand 5 minutes before slicing.

My family loved this recipe. I baked it to 150 degrees and everyone was happy. The outside was well done and the inside medium rare. I would like to know if you are using prepared mustard or dry mustard. I used prepared and thought after that perhaps it should have been the dry.

I read this the other day and really want to make it, but now some of the ingredients are not displaying. I especially need whatever ingredients are each a 1/4 cup.

This turned out really good and was so simple. For additional garlic flavor I made one change; prior to placing the roast into the plastic bag to marinate, I cut about 5 cloves of the garlic into slivers, cut slits all over the roast and placed a sliver of garlic into each slit (we love garlic) - see photos. I cooked the roast to medium rare (145 degrees F), it was tender and utterly delicious. I served it with fresh green beans along with mashed potatoes and gravy. We all loved this meal.
