Calabacita Ingredients

1 pound Squash-patty pan, yellow, or zucchini diced in medium sized pieces1 medium Tomato diced
1/4 cup Water 1 teaspoon Salt
10 ounce Frozen corn about 1 1/2 cups Pepper dash
3 tablespoon Butter 1 tablespoon Sour cream
2 tablespoon Onion minced1/4 cup Cheddar cheese shredded
1 clove Garlic pressed or minced

Instructions for Calabacita

Cut squash inot quarter inch slices. Combine squash, corn, butter, water, onion, garlic, tomato, salt and pepper. Cover and cook for 25 minutes or until tender. Stir in sour cream and bring just to a boil. Turn off heat. Add cheese. Stir just before serving.
