In large skillet, spray cooking spray or melt butter. Add eggs or egg substitute. Top with shredded cheese of your choice and also any optional ingredients (bacon bits, onions, etc.) that you prefer. Cook over medium heat, stirring often, until cheese melts. Remove from heat. Heat tortillas in microwave about 30 seconds to soften.
Lay tortilla on plate and spoon about 1/4 cup egg mixture along bottom edge. Fold and wrap as for a burrito. Wrap tightly in a piece of the foil. Repeat with remaining ingredients. Freeze.
To eat, unwrap and place (seam side down) on small plate. Microwave for about 1 1/2 minutes. Unwrap and eat.
