Chocolate chip Orange and Cranberry Scones Ingredients
2 cups plus - all purpose
flour
1 tbsp.
orange
zest
1/2 cup granulated
sugar
1/4 cup whole milk or
cream
2 tsp.
baking powder
1 large
egg
1 tsp.
kosher salt
3/4 cup semi sweet chocolate or
white chocolate
chips
1/3 cup chilled cubed unsalted
butter
1/2 cup dried
cranberries
or other dried fruit
2 tbsp.
shortening
1 tbsp. course
sugar
crystals
1/4 cup fresh squeezed
orange juice
Instructions for Chocolate chip Orange and Cranberry Scones
Heat oven to 375
Lightly grease baking sheet
In large bowl, combine all dry ingredients, mix well.
Add butter and shortening using pastry blender, food processor or cut in with fork until mixture resembles course crumbs. Butter and shortening should be no larger than pea size.
Add orange juice, milk or cream, orange zest and egg.
Fold until JUST moistened. DO NOT OVER MIX
GENTLY FOLD in chocolate chips and cranberries or other dried fruit.
Turn dough out onto lightly floured surface. Sprinkle with more flour and gently kneed in to make dough not sticky to touch(only if needed) DO NOT OVER KNEED it will make scones tough.
Roll out to about 1 inch thick circle shape.
With pizza cutter, cut circle in half. Then cut each half into thirds to make 6 elongated triangles.
Place on lightly greased baking sheet, alternating long edges with pointed tips, 1 inch apart.
Bake for about 20 minutes. Depending on thickness and oven temps. They will be golden when done. Chips should be melty.
Remove from oven, let cool slightly on baking sheet.
Brush with unsalted, melted butter, sprinkle with sugar crystals.
Makes about 6 scones.
