Stem all peppers. Process jalapenos in a food processor (seeds and all) until they are finely chopped - do this in small batches to ensure they are chopped finely enough. In a heavy sauce pan, add white vinegar to cover what you have processed. Turn the heat on high being careful not to over load the sauce pan with peppers and vinegar so that it doesn't want it to boil over.
It will take aproximately two to three hours depending on your quantity. When your relish is reduced to almost half and the color is a deep green (not bright) you are done.
