We love having potatoes for breakfast. On Saturday we like to have a real breakfast...eggs, potatoes, bacon/ham, fresh garden salsa, coffee, orange juice and maybe something sweet(not always). I like making these potatoes first as it takes about 4o-45 minutes in the oven to bake. It gives me plenty of time to set up the table while they are baking as well as make the rest of the menu. I like to use these potatoes as well in egg burritos. These potatoes are versatile .... they do very well as a side dish for lunch or dinner.

tip: you can make them spicy if you like by adding


Preparation

Preheat oven to 425 deg.

Peel and wash potatoes. Dice potatoes in small cubes (about 1/2 inch thick).

Place in a medium bowl. Add olive oil and toss to coat all potatoes. Add the rest of the ingredients and toss to mix.

Place potatoes in a single layer in a 13x9 pan.

Bake for 40 -45 minutes or until nicely golden brown. Enjoy!

Yum! I altered how I seasoned the potato cubes (used some garlic seasoning), and cooked them for only about 30 minutes. I also used red potatoes I had on hand (and used more then this recipe called for), but still tastes great.

I'll be making these again.

Very nice, easy recipe to help round out breakfast (or any meal). I used small red potatoes because I had them on-hand. A little cayenne pepper would have been a nice addition, as would some crumbled bacon or chives.

I did it in the oven and it took a long time and wasn't cooked too well. I tried it again, but this time used a skillet instead and it came out much better. I would recommend a skillet instead - just add more oil.

These were very good but I did overcook them because I think I cut them smaller so it didn't take 40 minutes. They are easy to make and very tasty. I added 1/2 teaspoon of chili flakes and they had a pretty good kick to them if you like that. I would take it down to 1/4 teaspoon for our family likes.
