Ingredients

Cream Cheese Icing:


Preparation

Mix eggs and sugar in large bowl. Add oil and mix. Combine dry ingredients and add to egg mixture. Mix in vanilla and add pumpkin. Pour into a floured loaf pan and make smaller loaf or cupcakes with remaining batter. Bake at 350° for 50-60 minutes or until knife comes out clean.

Icing:

Beat butter and cream cheese until well blended. Slowly add sugar and vanilla.

Loved this recipe!!! I doubled it and had soo many cupcakes. But not one of them was left to waste!!! I also added some spices to it, like ginger and allspice. Just to give it a little more. Everyone loved it. The cool part too is I didn't have to double the frosting. There was plenty!! Favorite recipe for fall!!!

Easy, moist, and very tasty! I will definitely make this again! I baked mine in mini loaf pans and reduced the bake time to about 45 minutes.
