Ingredients
- 2 cups split peas picked over and rinsed well
- 8 cups water
- 1 large ham hock or
- 1 lb. ham cubed
- 1 large garlic clove pressed or minced
- 1 medium onion chopped finely
- 1 stalk celery w/leaves chopped finely
- 1 bay leaf
- 1 large baking potato peeled and cubed
- 2 large carrots peeled and cubed
Preparation
Bring the water to a boil then turn down to a simmer and add the peas, water, ham hock (or, if using ham, add it during the last 20 minutes of cooking along with potatoes and carrots), garlic, onion, celery and bay leaf and cook until peas are soft, about 55 minutes. Add potato and carrot (and ham if using that instead of ham hock), and cook an additional 20 minutes. Salt and pepper to taste.
