Heat half of oil in large nonstick skillet. Add tofu and cook over high heat about 5 minutes until it's golden brown. Remove tofu from the pan.
Using the rest of the oil add the coleslaw mix, mushrooms, and pepper and stir-fry over high heat for about 5 minutes. Add the scallions, garlic, and ginger and stir-fry for about a minute.
Remove skillet from heat and stir in the soy sauce. Add tofu back to pan.
Spread about 2 tsp of hoisin sauce on a heated tortilla and top with 1/2 cup of tofu mixture.
