Vegetarian Enchiladas

These are so quick and easy and I usually have everything on hand which is always helpful.

Ingredients

  • 3/4 cup refried beans; fat-free spicy
  • 4 (8-inch) four tortillas
  • 1 cup frozen meatless burger crumbles (I use Morningstar
  • 3/4 cup enchilada sauce
  • 1/2 cup Cheddar cheese; reduced-fat shredded, sharp
  • 1 chopped green onions (optional)

Preparation

1. Preheat over to 400 degrees.

2. Spread 3 Tbsp beans over each tortilla. Sprinkle 1/4 cup burger crumbles down center of each tortilla. Place tortillas, seam side down, in an 8-inch square baking dish. Pour sauce over tortillas and sprinkle with cheese.

3. Bake for 15 minutes or until cheese is nice and melted. Top with onions.

I made this for my son and myself, we are new vegetarians. We were so pleased with the outcome. I served it with red beans and rice, and some fresh diced tomatoes, it was better then most of the meals we have had at mexican restaurants. Thank you so much for sharing this with us.
