Add water and olive oil to bread machine, then add flour, sugar, and salt. Make well in center of dry ingredients and add yeast there. Program machine for dough setting.
Place dough onto floured surface and kneed for 1 minute, then let rest for 15 minutes. Roll dough onto baking stone which has been sprinkled with cornmeal. Create edge with fingers. Sprinkle on cubed mozzarella, then capers then chopped pancetta.
Place in preheated 500 degree oven for 12-18 minutes on bottom rack.
