Ingredients
- 1 can (12 oz) Black beans drained
- 1 can (12 oz) Corn (mexicali) drained
- 2 tablespoon Salsa
- 1 tablespoon Parmesan
- 1/2 cup Carnitas prepared
- 4 large Flour tortillas Burrito size
Preparation
Filling:
Mix beans, corn, salsa and parmesan together and heat in microwave 2 minutes or until hot. If carnitas is not still hot, warm in microwave until warm, about 1 minute.
Buritto:
Heat iron griddle until hot. Place tortilla on griddle and heat on one side, then flip and heat on the other side. Remove from griddle. Place some of the bean mixture down the center of the tortilla, then top with carnitas. Fold top over, tuck in sides and complete roll. Repeat for remaining tortillas.
Serve with guacamole and sour cream.
