Preparation

Mix salt, pepper. Mix herbs.

Thinly slice onions & cook with olive oil, stirring, until soft & golden brown, ~20".

Peel potatoes & slice lengthwise 1/8" thick. Cut away peel of butternut squash & slice lengthwise 1/8" thick. Butter 13x9 pan. Start layering

1/3 carmelized onions

1 c heavy cream

sprinkle ? parmesan cheese.

1 c heavy cream

sprinkle ? parmesan cheese.

1/3 carmelized onions, ? herbs

1 c heavy cream

sprinkle ? parmesan cheese.

Preheat oven to 350. Cover gratin w aluminum foil & bake 1 hr or until soft. Remove foil & bake 20" until brown
