This recipe works well with most anything off the grill and is especially great when you need a quick side dish for a pot-luck! Great when served cold on a hot summer day, but really works year round when serving mexican foods. Go ahead and stock the pantry!!
In a small dish rehydrate onion with 4 Tablespoons water and let stand for 5-10 minutes ( or use 4 TBL fresh onion, chopped). Mix all ingredients in a bowl and refrigerate. Serve cold or at room temperature.
