PLACE ONION, CELERY, CARROT, SALT AND VINEGAR IN WATER AND BRING TO A BOIL. IMMERSE LIVE LOBSTERS IN BOILING WATER AND COOK 20 MINUTES. LET LOBSTERS COOL IN WATER IN WHICH THEY WERE BOILED. SPLIT OPEN AND SERVE WITH ANY SUITABLE SAUCE. SERVES 2
