Avocado-Corn Relish:
Combine cumin, cayenne, corn, red bell pepper, red onion, cilantro, and avocados in a large bowl.
Mix well.
Cover and refrigerate until ready to serve.
Lime Cr?me Fraiche:
Whip cr?me Fraiche until light and fluffy.
Fold in lime juice.
Cover and refrigerate until ready to serve.
Blackened Scallops:
Pat scallops dry with a paper towel. Sprinkle generously with blackening seasoning. Cook in a large oiled skillet over medium-high heat, turning each scallop once.
Assembly:
Place each scallop on a tortilla chip and add a spoonful of the avocado-corn relish.
Then top with a dab of lime cr?me Fraiche.
