Ingredients


Preparation

Cake:

Stir together well flour, baking soda, cinnamon, salt and 2 cups sugar.

In separate bowl beat, olive oil, vanilla, eggs, carrots, pineapple, and raisins.

Combine both mixtures and place in an 8X12 pan.

Bake for 50 to 60 minutes in oven preheated to 350 degrees.

Frosting:

Combine cream cheese, powdered sugar, butter and coconut to make frosting.
