Blend for graham cracker crust and topping: crackers, sugar, chocolate chips, and butter.
Divide crumb mixture amonth 10 dessert dishes, reserving some for topping, if desired. pat crumb mixture firmly in bottom and up the sides just a short way of each dish.
melt over very low heat or double boiler: chocolate chips and butter. Separate eggs. Beat the egg yolks and gradually stir into melted butter chocolate mixture. Cool over a bowl of ice water for 5 to 10 minutes.
Beat egg whites at high speed in electric mixer until stiff but not dry; fold into cooled chocolate mixture.
Beat whipping cream until foamy, gradually add sugar and continue to beat with electric mixer on high speed until shippped: cream and sugar. Blend into chocolate mixture until smooth: whipped cream and vanilla.
Pile over crust in dessert dishes and refrigerate or freeze, as desired. Top with reserved crumb mixture to serve.
