Grandma's Navy Bean Soup

An easy recipe for bean soup that is great on a cold winter's night.

Ingredients

  • 1 package of Great Northern Beans
  • 1 large onion finely chopped
  • 1 large potato diced
  • 1 Salt and pepper to taste - do not add salt until

Preparation

Rinse beans and sort to remove discolored or spotted beans. In large stock pot, cover beans with water and bring to a boil. Remove from heat and soak covered overnight.

In the morning - pour off water. Refill with new water, add ham bone, onion, and diced potato. Cook on low until beans are tender (may take all day).

Remove ham bone and take off any remaining ham. Add up to 2 cups of additional ham.

Let simmer for a minimum of an hour, stirring ocassionally. Season with salt and pepper to taste.
