Stuffed Manicotti

Preparation

Brown sausage, in a medium sized skillet, once brown drain. Remove 3/4 of the sausage, set aside in a bowl lined with paper towels. (This also helps soak up the grease.)

Stir in tomato sauce and paste, water, brown sugar into the remaining sausage in the skillet. Simmer for 15 minutes. Stir often.

In a medium bowl, combine drained sausage and ricotta, add 2 cups of Mozzarella cheese. egg, and parsley. Mix well. This will be your stuffing.

In the 9 x 13 baking dish pour in 1/3 of the sauce.

Here's when you want to preheat your oven to 350 degrees.

Take a cooked manicotti noodles, and split it down one side.

Take your ricotta stuffing and place enough inside to wrap the noodle back around it.

Place split seam-side down in the baking dish with the sauce.

Continue until you have either ran out of stuffing. (I usually have one noodle left over)

Pour remaining sauce over the top of the pasta and top with Mozzarella cheese.

Place in the preheated 350 degree oven and bake til the cheese is melted and slightly brown. Approximately 20-30 minutes.
