Ingredients

  • 1 Spinach - 4 bunches (leaves only)
  • 1 Garlic - 3 cloves (chopped)
  • 1 Ginger -1/4 teaspoon
  • 1 Onion - 1 small (finely chopped)
  • 1 Dried Red Chilies
  • 1 Ghee (Clarified Butter) or vegetable oil - 3 teas
  • 1 Green Chilies (optional) - 2 (chopped)
  • 1 mustard seed - 1/2 teaspoon
  • 1 cumin seed - 1/2 teaspoon
  • 1 low fat grated cheese - 1 teaspoon
  • 1 tomato - 1

Preparation

Boil water and put spinach leaves in it. Let it boil for 15 minutes. Drain the water and blend the spinach in a mixer. In a pan heat Ghee/oil and add dried red chilies, mustard and cumin seeds. When the mustard seeds start sparkling add onion, garlic and ginger. After the onions become translucent add chopped tomatoes and green chilies (optional). Cook till it becomes a gravy, add the mashed spinach and saute for sometime. Then bake the whole mixture for 8 minutes in preheated oven at 320F. Garnish with grated cheese.
