Italian Sausage Skillet Slop

Great comfort food, my family has been making this for years and it's a favorite.

Ingredients


Preparation

Crumble the sausage into a skillet and cook over medium heat, stirring often until meat begins to brown. Add onions and bell pepper. Continue

to cook until the onion is soft, but not brown. Pour off excess fat.

Stir in garlic and cook for 1 minute. Add tomatoes (break up with a spoon). Bring to a boil,

reduce heat and simmer about 10 minutes or until thickened. Meanwhile,

cook pasta according to package directions. In a bowl, combine parsley,

basil, 1/2 cup of parmesan cheese, and olive oil. Add rigatoni and mix.

Pour in the mixture from the skillet and stir. Serve with the remaining

1/4 cup of cheese.

I only wish that the name was more elevated. I have made variations of this sauce for many years. It is the backbone of Italian meat sauces. Add extras such as celery, carrot and mushrooms. Dice it differently. Change cook times, but always add garlic, learn to do "Misto". This is the most forgiving meat sauce in the world. It is the heart of Cacciatore and Bolognese at the same time

i halved the olive oil and was glad that I did, it still seemed a little oily, also I added the Italian seasoning to the tomatoes instead of buying the Italian seasoned tomatoes (30mg sodium instead of 800mg). Overall excellent, can't wait to make it again!
