Affordable elegant at-home dining!
Preheat oven to 350? F. In a skillet sprayed with nonstick vegetable cooking spray, over medium-high heat, add olive oil, garlic (optional), onion ( optional), and mushrooms. Saute for 3-4 minutes. Add Italian seasoning and marinara sauce. Cover and simmer on low heat for 5 min. Prepare spinach according to directions and drain. Combine spinach, ricotta cheese, and Parmesan cheese. Mix well. Spread spinach mixture evenly along the length of each cooked lasagna noodle. Roll up each noodle lengthwise and place in a shallow baking dish. Pour sauce over roll-ups and sprinkle with low-fat mozzarella cheese. Cover and bake 30 min.
