Ingredients
- 6 quarts Figs
- 6 lbs Sugar
- 2 quarts Water
- 3 each Lemons (Optional)
- 3 quarts Boiling Water
- 1 cup Soda
Preparation
Put stemmed figs in a large pail.
Add soda.
Pour boiling water over figs and let stand for 10 minutes.
Drain and rinse well.
Make a syrup of sugar and 2 quarts of water, add lemon if desired and cook for 10 minutes.
Add figs and cook until figs are clear.
Let figs stay in syrup over night.
Next morning brings figs to boil.
Place in hot jars and cover with syrup and seal.
When you have less than 6 quarts of figs, 6 cups of sugar to 1 quarts of water. 4 Cups of sugar to 5 cups of water.
