Caribbean Chicken Salad

Jerk seasoning is traditionally used in Jamaican cooking, and is a flavorful blend of citrus and spice. If you're concerned about the 'heat factor', no worries - the sweetness of the citrus and the creaminess of the avocado balance the spiciness nicely.

Ingredients

(Suggested: Lime vinaigrette dressing)


Preparation

1. To prepare Jerk seasoning, combine the onion flakes, onion powder, thyme, salt, allspice, nutmeg, cinnamon, sugar, black pepper and cayenne pepper.

2. Combine the lime juice and olive oil and coat both chicken breasts, then sprinkle both sides of the chicken with Jerk seasoning.

3. Lightly coat pan with olive oil or non-stick cooking spray. Cook chicken over medium-high heat, turning once, for 10 to 12 minutes or until a thermometer inserted in the thickest portion registers 165 degrees F. Remove from the pan to cutting board and cut the chicken into 1/4" thick diagonal slices.

4. Divide the greens between two plates and lightly dress with a lime vinaigrette. Add the mango and avocado to the salad and top each with equal portions of the chicken.
