Ingredients


Preparation

Melt bacon drippings in 8 quart, heavy sauce pan and sweat vegetables with rosemary, garlic, black pepper and pepper flakes. When soft, stir in sugar, salt and lemon halfs, squeezing juice into pot and dropping lemons in also. Add vinegar, stirring until sugar melts, then add ketchup and liquid smoke. Bring to a boil, reduce heat to simmer and cook until vegetables are very soft. Taste to correct seasonings. Sauce should be sweet-sour, smokey, and with a slightly peppery after-taste. Mix cornstarch with water to form a slurry and thicken simmering sauce to desired thickness. Cool slightly and pass through a food mill fitted with a fine disk.
