Delicious vegan bean dish adapted from Mollie Katzen's Vegetable Heaven. The mango adds a sweetness to the beans that keeps you wanting more.
Heat oil, 1 3/4 cups onion, garlic, ginger, cumin, and salt in medium skillet. Saute over medium-high heat for about 3 minutes.
Turn the heat down to medium-low; add black beans and half of the lime juice. Saute for 5 minutes or until flavors have mingled nicely and the beans are heated. Mash the beans slightly with the back of the spoon and transfer them to a bowl.
Stir the remaining lime juice and half the mangoes directly into the hot beans, mashing the mangoes a little as you stir. Add black pepper to taste. Cover and let stand for 15 minutes to let the sauce develop.
Serve warm, at room temperature, or even cold; topped with the remaining red onion and mango.
