Chicken and Apricot Tagine

A traditional Moroccan stew of spiced meats and vegetables that is named for the conical topped earthenware it is cooked in. The tender chicken, warm spices and sweet apricot in this tagine are wonderfully balanced to create a dish that may just become your next favorite comfort food!

Preparation

Heat the non stick cooking spray in a large skillet over a medium heat. Add the onion, garlic and spices, and fry for about 5 minutes.

Add the tomato purée and chicken stock and bring to a boil.?

Then add the orange juice and apricots and simmer for a few minutes with the lid partially on.

Add the chicken and continue simmering for 15 - 20 minutes, or until the chicken is cooked through. Garnish with coriander and serve with couscous for a truly authentic Moroccan meal!
