Ingredients


Preparation

Soak beans overnight

Chop onions, sweat in soup pot with butter

Add 2 qts. of chicken stock and herbs

Chop carrots to bite size and add

Let simmer until beans are done but not too soft

Add cayenne

Add more stock (or water)as needed

Sip to taste

Puree some if desired

Variation: Add Hambone and use water instead of chicken stock
