Cinnamon Sopapilla Cheesecake

This is a very tasty and easy recipe my husband brought home from work, and prepared it for dessert this evening.

Ingredients


Preparation

Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.

Bottom crust:

Spread one can of crescent rolls over the bottom of the pan.

Filling:

Mix two packages of cream cheese, one cup of sugar, and 1 teaspoon of vanilla for about one minute, or until well blended. Spread the filling evenly over the bottom crust.

Top crust:

Arrange the second can of crescent rolls over the filling.

Topping:

Pour the melted butter over the top crust. Mix 3/4 cup sugar with 1/2 teaspoon of cinnamon, and sprinkle over the top of the buttered crust.

Bake for 30 minutes, or until the topping is browned. Serve warm, and refrigerate leftovers.

I substituted reduced fat crescent rolls and reduced fat cream cheese. I also added some apple cinnamon jam to the filling mixture. For the top crescent layer, I spread it on foil (sprayed with pam), got it flattened and to the right size, then flipped the whole thing over onto the filling and peeled off the foil. Worked great. Next, I hand spread I Can't Belive It's Not Butter gently over the top and used granulated brown sugar and the cinnamon over that. This came out perfect and got great reviews from coworkers.

This is such an easy recipe to throw together! I literally looked in the fridge for crescent rolls to bake with dinner and remembered this recipe instead for dessert. The first time I tried this was warm with a scoop of vanilla ice cream...melts in your mouth every time!

It was suggested to me by a friend at work to swirl some strawberry jam through the filling before baking. I think I will try this next time.

This could be a very versitile recipe. Cherry pie filling might be good, if added under the top crust. I think the possibilities are endless. The original recipe would be hard to beat.
