Apple Turnovers using Phyllo Dough....I have to give credit to my wonderful mom, for this recipe. She often made this when we were growing up....always a delicious treat! My mom loved to cook and bake for us children. She always tried to make things that were a bit more on the lighter side. This dessert was often baking in the oven on a Sunday afternoon. The delicious aroma of baked apple turnovers permeated throughout the house. Every time I make these, I think of my mom.

Preparation

Peel and dice apples. In a medium saucepan, add apples,sugar,vanilla,orange/lemon peel, cinnamon and cornstarch. Heat on med-low stirring every so often . Cook for about 5 minutes or until the apple mixture thickens. Remove from heat. Remove phyllo dough from package and have a damp towel ready so you can keep the phyllo sheets covered as you work. They tend to dry out very quickly. Melt butter. Using a pastry brush, brush one phyllo sheet.The longer side facing you. Fold in half(vertical)and brush again. Fold again to form a long strip. Brush again with butter if you like. On one edge, add about 1 1/2 TBS of apple filling. Roll in the form of a triangle...just like you would fold a flag.Brush the outside of the triangle phyllo turnover with extra butter. Place on a cookie sheet. Bake at 375 for 15 minutes or until nicely golden brown. Check after about 10 minutes so that they won't burn. Oven temps vary. Let cool and sprinkle with powdered sugar.

I didn't have orange or lemon on hand and not wanting to run to the store I added 1 tablespoon chopped candied ginger and 1/4 cup dried cranberries. The results were excellent. I had left over filling and served it as a chunky apple sauce. Excellent to serve with pork!

This was WONDERFUL! I was kindof afraid of the phyllo - but I found a tip from a chef online that made things a LOT easier - and FASTER! Instead of brushing your butter, use a butter cooking spray! I did some with real butter and some with the spray and you cannot tell the difference in the final product. THIS will be a favorite in my family for years to come!!! Thank you!
