Coq au Vin

Chicken cooked slowly in a flavorful red wine sauce.

Ingredients


Preparation

1. In a tall saucepan reduce wine by one-third (boil for about 5 minutes), set aside

2. In another large saucepan heat the non stick cooking spray over medium heat and brown the chicken (about 6 minutes), turning frequently. Remove with a slotted spoon and set aside

3. Add the bacon and shallots to the pan and fry for 4-5 minutes on medium heat, then stir in the flour and continue cooking for another minute

4. Add the chicken, garlic, thyme, bay leaves, reduced wine and stock to the pan with the shallots and bacon. Bring to the boil, cover and simmer gently for 15 minutes

5. Add the mushrooms and carrots and cook for a further 10 minutes. Serve with mashed potatoes
