Preparation

Preheat oven to 350 degrees. Grease and flour two medium loaf pans. Mix eggs, oil, vanilla, and sugar; set aside. Sift dry ingredients and add to egg mixture. Add carrot, zucchini, banana, and pecans. Mix well. Mixture will be very thick. Pour into loaf pans; should be at least half full. Bake for 50 to 60 minutes.

This was a great bread with a few changes. Instead of pecans, I sprinkled about 2 TB walnuts on top the two loaves; instead of two cups of sugar, I used 1 cup sucralose and 1/8 cup sugar; instead of 1 cup oil, I used 1 TB oil and the rest of the cup was made up with unsweetened applesauce; also I added about 1/4 cup nonfat plain yogurt and 1/4 cup semi-sweet chocolate chips. It was very rich and moist and not too sweet. Perfect.
