Jim's Cajun Firecrackers

A really simple and easy recipe this is my take on this addictive appetizer. Most people who see the recipe for the first time, including me, think "Whoa! 1-1/3 CUPS of oil!" It seems like a lot, but I've tried it with less and the spices seem to clump up instead of coating the crackers, as intended. These are just mildly spicy, in spite of the name. If you want them hotter, substitute tabasco sauce for the Louisiana hot sauce and adjust to suit your taste, or add some cayenne pepper or black pepper whatever floats your boat. These go great with your favorite beverage, beer or tequila sunrise. The Tupperware marinater is absolutely perfect for this dish, but any similarly sized container that will keep the crackers relatively stationery while the oil and spices do their magic will work. Ingredients

  • 1 1/3 cup Canola oil
  • 2 packages Hidden Valley Ranch Dressing Mix (powder)
  • 2 tablespoon crushed red pepper flakes
  • 2 tablespoons Louisiana Hot Sauce
  • 1 box saltine crackers (unsalted or limited salt type)

Preparation

Remove crackers from sleeves and lay in a sealable container, standing on edge.( All 4 sleeves will fit perfectly in a marinating Tupperware container.)

In a measuring cup or small bowl, place remaining ingredients and mix well. Pour the mixture over crackers and close the container. Flip the container a total of 4 times within 15 minutes (approx. every 4 minutes).

I specify the unsalted or lightly-salted top crackers because the regular saltines make these way too salty and much less appetizing for most people.
