Jim's Texas Stuff

This has been an abolute hit with everyone to whom I've ever served it. It's sort of like a Frito Pie, with a few twists. I guess you could call it Southwestern comfort food.

Ingredients

  • 2 pounds lean ground beef (or ground turkey, or a mixture of the two)
  • 1 large onion - chopped
  • 2 10 oz cans tomatoes with green chilies
  • 1 1 oz package chili seasoning mix - your favorite; I think Wick Fowler's is best.
  • 1 15 oz can ranch-style beans
  • 1 15 oz can black beans
  • 1 10 oz can corn, whole kernel
  • 1 pound processed American cheese - cubed
  • 1 cup light cream or half-and-half
  • 1 large bag tortilla chips

Preparation

Brown ground beef (or turkey) in a large skillet and drain.

Add onion and cook briefly, to soften.

Add tomatoes and green chiles, chili mix, and beans, and corn and simmer for 15 minutes.

Add cheese and cream and simmer for 5 minutes.

To serve, in serving bowls, crumble some tortilla chips into each bowl, pour mixture over it, and eat. Mmm, mmm, good!
