Jim's Blue Cheese Burgers

These are a fun variation on the regular burger. They have a rich/savory taste with a slight hint of sweetness. I really like blue cheese so, when the end product is for personal consumption ,I often use a fudge factor when adding this ingredient.

Preparation

Blend the worcestershire, sweet soy, and hot pepper sauces in a small bowl or cup. Mix in the black pepper, seasonings, and mustard.

Put the hamburger meat into a large bowl, and dump the blue cheese crumbles and chives on top. Pour the sauce mixture over this, and mix everything thoroughly with your hands.

Once the hamburger, cheese, chives, and seasonings are mixed, it will be slightly wet and will not easily hold together in patties. Add enough of the bread crumbs, and mix thoroughly, to absorb some of the liquid and make it easy to form hamburger patties.

Make another batch of the seasoning/sauce mixture (first 6 ingredients) to use as a baste.

Cook the hamburgers as usual, basting the cooked sides as you turn them. This will add an extra punch of flavor to them.

Ketjap (or Kecap) Manis is an Indonesian sweet soy sauce. It has a much less salty taste than either regular or "lite" soy sauce. You can find it in stores that sell ethnic foods (such as Fiesta or Whole Food Market in Texas) or order it online. DO NOT substitute regular soy sauce. There are recipes you can find online for Ketjap Manis, or for a rough substitute, mix one part lite soy sauce with one part dark molasses.
