Please keep in mind that I do not measure when cooking, but these are pretty close estimates, so you can add more or less to make it your own.
Melt butter with garlic in small bowl in micro. Allow to cool, when cooled place shrimp in ziplock bag and add melted butter, garlicand cilantro, mix shrimp around to coat all pieces. Press out air and seal, chill and marinade for 40 minutes.
Heat grill pan, you do not need to grease because the shrimp is already coated with butter. You want this grill pan extremely hot. Place bag of shrimp in micro for 20 sec. pausing after 10 seconds, just to slightly melt the butter again.
Use tongs and place shrimp on grill pan, light salt and pepper shrimp, sprinkle with red pepper flakes according to your taste, grill 2 minutes without moving them, after 2 minutes, turn over with tongs, cook 1 more minute, then with tongs move shrimp all around pan picking up all the bits of blackened pepper and garlic, mix them all around for a another, so you are only cooking them for 4-5 minutes?less for smaller shrimp.
Infusing the shrimp with cilantro during marinating is what makes them Puerto Nuevo style; I got this recipe from one of my favorite places to go in Rosarito Beach.
