Italian Sausage Stir-Fry

This is my take on a Chinese stir-fry using orzo in place of rice and traditional Italian ingredients

Ingredients


Preparation

Slice onions and zuccini, cut peppers into 1 inch strips

Wash and cut green beans to 1/2 inch pieces

Boil orzo according to package directions.

Heat tomato sauce (Jar or homemade), add honey and let simmer.

Add oil to hot wok, add garlic and let infuse with oil; about 30 seconds.

Add sausage and cook until browned. Remove from wok and set aside.

Add onion, green pepper, zuccini, beans, and cook 5-10 minutes or until vegetables are crisp tender.

Re-add the sausage and blend, stiring constantly until sausage is cooked through.

Add tomato sauce and blend to combine.

Serve over Orzo.

was great! Didnt have zucchini but replaced with eggplant and replaced the orzo with jasmine rice. Amazing!
