Ingredients

  • 1 pound Self raising flour
  • 8 ounces raisins
  • 8 ounces currants
  • 8 ounces sultanas
  • 4 ounces chopped peel
  • 8 ounces demerara sugar
  • 10 fluid ozs hot tea
  • 1 large egg beaten.

Preparation

Line two 1 lb loaf tins (the bases lined with silicone paper ).

Place all the fruit, including the candied peel, in a bowl, then dissolve the sugar in the hot tea. Pour this over the fruit Cover the bowl and leave it overnight so the fruit becomes plump..

Next day, pre-heat the oven to gas mark 3, 325?F (170?C). Add the beaten egg mixture to the bowl containing the fruit. Then add the flour and give everything a really good mix. It's much easier if you get in there with your hands! Divide the mixture between the prepared loaf tins and bake them in the centre of the oven for 1?-1? hours, until they feel springy in the centre. For a fan oven, bake for around 1 hour. Then straight away, turn them out on to a wire rack to cool.
