Spinach and Artichoke Dip (Loupy)

Very naughty, but absolutely delicious, not for the calorie conscious and definitely for rare occasions! Super with bread or crisps, and could even be used in a tart for a fabulous starter.

Ingredients


Preparation

Prep your ingredients as follows:

1.5 large bags of Spinach (roughly chopped into strips)

1 tin of artichokes (in water – roughly chopped into 1cm chunks)

100g of pine nuts (ground the pine nuts, or add whole if you prefer)

1 small white onion (chopped very finely, the smaller the better)

3 large cloves of garlic (chopped very finely, the smaller the better)

4 generous tablespoons Parmesan

150g Extra Strong Cheddar

80g of Romano Cheese

All cheese should be grated very finely

Heat the oven to 180/200 degrees.

Method

1. Fry the onion and garlic with a little olive oil until translucent in a large saucepan.

2. Add the artichoke hearts to the onion and garlic

3. Putting the saucepan to a low heat, add the spinach in handfuls to the onion and garlic mixture until the spinach is dark green in colour and mixed in nicely to the mixture.

4. Add the cream cheese one tablespoon at a time

5. Add the other cheese and mix

6. Add the pine nuts

7. Place into a large bowl, and bake in the oven at 180/200 for 40 minutes when the mixture will be hot throughout and brown on the top

Nibble with fresh bread or crisps of your choice.

Also lovely in tarts for a starter.

The best way to get this perfect is all in the preparation make sure that the onion and garlic really are as fine as you can get them, i use an onion chopper! [I posted this recipe.]
