Shrimp Ceviche From Panama

Ceviche is a seafood salad made with a variety of seafoods such as Corvina(Sea Bass), Talapia, octupus, squid and shrimp and "cooked" in lemon or lime juice with added spices. It is popular mainly in Latin America countries.

Ingredients

  • 1 any amount of seafood- shrimp fish, octupus, squid or other seafoods.
  • 1 onion chopped,diced ( 1 C for every 3 C of seafood)
  • 1 red peppers chopped (for festive colour) 1/2C?
  • 1 Lime juice - enough tho cover seafood completely
  • 1 salt & pepper to taste
  • 1 hot sauce (picante) or jalapeno or habenero peppe
  • 1 Cilantro or Parsley chopped
  • 1 box of saltine crackers- for enjoying the Ceviche

Preparation

1) Chop fish into small bite size pieces and shrimp into 3-4 pieces and place in bowl.

2) Add onions, red peppers, and hot sauce or hot peppers to taste.

3) cover everything with lime juice. It should cover by at least 1/4 in.

4)Leave on the kitchen counter - 2 hours for shrimp and 6-8 hours for fish(fish will turn white). After "cooking" if the seafood is too watery, pour some of lime juice out.

5)Refrigerate until cold. Will keep for about 1 week. Before serving taste for hotness and adjust using hot sauce or hot peppers.
