Potato and Cauliflower Chowder

Ingredients


Preparation

Melt butter in pan and then add onions and cook until clear. Add chicken broth and potatoes and bring to boil. Simmer covered for 5 min and then add cauliflower. Return to boil and cook for another 5 min. Simmer on low for about a hour.

In a bowl, mix flour and half and half and then add to soup. Then add the cheese. Do not boil but cook until cheese is melted. Season to taste with salt and pepper.

Wow! I was left scraping the bowl and spoon to get every last bit I could. My boyf hates vegetables and couldn't even tell there was cauliflower in there, it blended so well; next time I think I'll actually add a lot more veggies next time. Thanks for posting, we will be devouring this often!
