This soup is to die for and very easy to make. The secret to a GREAT soup is to use freshly boiled crawfish!

Ingredients

  • 1 Stick butter
  • 1 large Onion chopped
  • 2 Celery stalks minced finely
  • 1/4 cup Green onion finely sliced
  • 2 Cloves garlic minced finely
  • 2 cans Cream of potato soup
  • 1 can Cream style white or yellow corn
  • 1 pound Crawfish tails w/ fat
  • 1 quart Half&half
  • Salt to taste
  • Tony Cashere's Seasoning Mix to taste
  • 1 tablespoon Fresh Parsley chopped finely

Preparation

Melt the stick of butter in medium sized pot over medium to medium-high heat

Saute onions in butter, then add celery, green onion, and garlic and simmer for an additional 5 min. Add remaining ingredients. Simmer for 30 to 40 minutes.

Serve hot with french bread or garlic bread.
