I served these with Serrano's cafe mexican rice and my home made beans. You can put some sour cream in a squeeze bottle and make a nice design on your plate for presentation!

  


Chicken Flautas From Serrano's Cafe

This is our secret recipe for Flautas, the secret is parmesan cheese, I know, you are saying "huh", that's not Mexican, well after you taste them, then you will see how good they taste, you can also add other things inside, but I would make them like this first so you can see what might go good with them for next time. You can also add more cheese, I am a very light cheese eater now, so I always use less. To make these even more wonderful, add some sour cream and a dallop of guacamole and some shredded lettuce.

Preparation

I fillet the breast with a knife, each breast in 3 slices so that they cook quicker, put salt, pepper, garlic salt on each fillet.

Cook chicken breast in a heated saute pan with butter, oil,. Let cool, save juices

In food processor, put in onion, and process until minced, set aside in a bowl, then cut chicken in pieces and process them as well until minced, you may have to do a few batches. Once they are minced, add them to the onion, add any chicken juices to the mix, then add your cheese and mix well, add some salt and pepper and taste, it should bond together like meat loaf, that is the perfect consistency.

Take your tortillas and heat them on open fire, both sides, get a few brown spots on there, that is good for flavor, line up your tortillas and divide your mix among the 6 tortillas. If you have extra then just make another one.

On a separate plate sprinkle a good portion of parmesan cheese for rolling.

Roll up tortilla faily tight without breaking them, when they are all rolled, keep them seam side down on counter until you are ready to cook….heat your oil and butter up in a sauté pan, high heat and cook 3 at a time, use 2 spoons to roll them as they cook, you can lean them up on each other as you cook them on all sides, its very easy, you want them brown, not burned, so just kind of keep rolling them, when they look fantastic, take them out and set them in the parmesan cheese and roll them, covering them generously, put them on a serving platter. You can heat them in the micro if you need to keep them hot.

The mistakes I made by baking my flautas were easily corrected by reheated the leftovers in a hot skillet with a little canola oil. The appearance and texture of the tortillas was 100x better.

I'm going to rate this after I make it correctly. Yesterday, I was winging and should've had the recipe nearby to at least follow the preparation techniques. I can definitely tell you what not to do as a result.

I started by sauteing thin slices of onion and peppers (bell &poblano). I removed this mixture from the pan and then sauteed some from corn kernels and set aside. I browned the chicken pieces, seasoning with a combination of sazon and sofrito which added great flavor.

My first mistake was not shredding the chicken before mixing it with the vegetables, fresh queso and a Mexican shredded cheese blend. Although I ended up with a very tasty end product, I would've preferred the textured of the shredded chicken for my flautas.

My second mistake was baking the flautas after spraying the baking sheet and flautas with cooking spray instead of browning on the stove top. They were still good and lightly crunchy, but didn't achieve the even browning and flaky crispiness of a pan fry.

I served my flautas with salsa, guacamole, and pepper jelly - all homemade. In addition, I added a drizzle of crema.

My results were good, but not what I had in mind. I will definitely be trying this recipe again.

This expression of chicken flautas tasted wonderful! The things I loved best about the recipe is that it was decidedly unfussy without giving up taste, used ingredients that I had on hand, and came together quickly and easily. Prior to sauteing, we seasoned the chicken as directed but did add some sazón seasoning to give it a little kick. We used homemade flour tortillas and, as for the cheese in the filling, used a combination of queso blanco pepper cheese, queso chihuahua and whole milk queso fresco (whole milk fresco melts!). We served the flautas with guitarmom's "Mexican Rice from Serrano's Cafe" and for topping the flautas, served crema, homemade guacamole, homemade pico de gallo, along with radishes and romaine lettuce tossed in vinegar. Next time, to spice up the filling even more, I may add some diced fire roasted poblano chiles, or maybe some smoky chipotle adobo puree.

These were fantastic. I don't have garlic salt so I just used garlic instead, I also don't own a food processor so I grated the onion finely and chopped the cooked chicken. But best of all these are super easy to make gluten free by using brown rice tortillas in lieu of flour. Make sure you heat them before attempting to roll them or they crack. Served with mexican rice and black beans they were a hit!!!
