Preparation

Preheat oven to 350. Spray a 9x13" pan. In large saucepan sprayed with Pam, brown turkey (removed from casings), onion and garlic 5-6 minutes until soft. Add eggplant, tomatoes, peppers, bread crumbs, basil; bring to a boil, stirring as needed. Transfer to a baking dish. Bake, covered, until veggies are tender, 45-50 minutes. Uncover, sprinkle with cheese, bake until cheese is lightly browned 15 minutes. Let stand 5 minutes before serving.
